custom fields watermark

I noticed if I try to edit the email field and try to add a watermark to it it says 'This is a fixed field and can be edited but not deleted.'

However, this particular field cannot be edited. Nothing can be edited and watermark cannot be added. All other custom fields can be edited but not this field. I've tried this on a couple of websites and it doesn't work. Am I missing something?
